Powiesiłam na ścianie “Listę Spraw Przyjemnych”! Jest to moja lista wszyskich rzeczy, które powinnam zrobić do końca miesiąca, a część nawet tydzień przed końcem Maja. Lista oczywiście każdego dnia rozrasta się, ale bywają takie dni kiedy kolejne pozycje zostają załatwione i znikają pod grubą kreską! Chciałabym powiedzieć Ufff!, ale niestety do końca listy jeszcze daaaaaleko. A Maj trwa w najlepsze, gonie każdą uciekającą minutę! Dlatego obiady w takim czasie najlepiej jak są szybkie! Zatem wyzwanie przyjęte, obiad w 30 minut!

Składniki:

  • średnia cebula pokrojona w kostkę
  • ¾ szklanki czerwonej soczewicy
  • słoik ciecierzycy (odsączonej)
  • puszka pomidorów krojonych
  • 150 ml wody
  • 1 łyżka oleju z avocado (może być też oliwa z oliwek)
  • 1 łyżeczka kurkumy
  • ½ łyżeczka słodkiej papryki
  • ½ łyżeczki imbiru
  • ½ łyżeczki cynamonu
  • sól i pieprz do smaku
  • natka pietruszki (tyle ile lubicie)
  • 1 łyżka jogurtu na porcję
  • sok z ćwiartki cytryny na porcję (opcjonalnie)

Przygotowanie:

Na głebokiej patelni dusimy na oleju cebulę. Po ok. 2-3 minutach dodajemy pozostałe składniki, mieszamy. Dusimy pod przykryciem ok. 20 minut. Podajemy skropione sokiem z cytryny (opcjonalnie), z łyżką jogurtu i natką pietruszki.

I hung a „List of Pleasant Things” on the wall! This is my list of all matters that should be done by the end of the month, and part of it even a week before the end. Of course, the list grows every day, but there are days when new positions are done and disappear under a thick line! I would like to say Ufff!, but unfortunately, it is still far to the end of the list. May lasts in the best, and I am chasing every minute which escapes! That’s why dinners during such an intense time are best if they’re fast! So, challenge accepted, dinner in 30 minutes!

Ingredients:

  • medium onion diced
  • ¾ cup of red lentils
  • jar of chickpeas (drained)
  • can of sliced tomatoes
  • 100 ml of water
  • 1 tablespoon of avocado oil (may also be olive oil)
  • 1 teaspoon of turmeric
  • ½ teaspoon of sweet pepper
  • ½ teaspoon of ginger
  • ½ teaspoon of cinnamon
  • salt and pepper to taste
  • parsley (as much as you like)
  • 1 tablespoon of yoghurt per portion
  • juice from a quarter of lemon per portion (optional)

Preparation:

To the deep pan pour avocado oil and add onion. After about 2-3 minutes, add the remaining ingredients, mix well. Stew under cover for about 20 minutes. Serve with lemon juice (optional), a spoon of yoghurt and parsley.

Makaron Mie z warzywami w sosie sojowym z cukrem trzcinowym

Od kiedy zaczął się Styczeń mam wrażenie, że podczas snu wskoczyłam do wehikułu czasu i przeniosłam się w okres wiosenny. O poranku ptaki ćwierkają radośnie, promienie słońca rozgrzewają, a nawet pojedyncze kwiaty napawają optymizmem. Dzień jest dłuższy…o te kilkanaście sekund, ale zawsze. Niestety kalendarz codziennie przypomina, że to jeszcze nie ten czas. I nawet dzisiaj można było poczuć zimny powiew powietrza. Brry!

Aby rozgrzać się dobrze na stole pojawił się dzisiaj Makaron Mie z duszonymi warzywami. Została jedna porcja, w sam raz na jutrzejszy lunch w pracy 😉

Składniki na 4 solidne porcje:

  • 1 opakowanie makaronu Mie (250g)

Warzywa:

  • 1 cebula
  • 1 papryka czerwona
  • 1 papryka żółta
  • 1 cukinia
  • 1/3 pora
  • 1/2 rzepy białej

Sos:

  • 2 łyżki oleju z avocado lub roślinnego
  • 8 łyżek sosu sojowego jasnego
  • 1 łyżka cukru trzcinowego
  • 100 ml wody
  • 1 łyżeczka czerwonej pasty curry

Przyprawy:

  • 0,5 łyżeczki pieprzu
  • 1 łyżeczka słodkiej papryki
  • 1 łyżeczka tartego imbiru

Wstaw garnek z wodą na gaz. W tym czasie możemy przygotować wszystkie warzywa do duszenia.

Cebulę, cukinię i rzepę kroimy na pół, a następnie na cienkie plasterki. Papryki kroimy na 4 części i wąskie paski, a pora w krążki. W dużej patelni (na prawdę dużej) umieść wszystkie składniki na sos, wymieszaj. Kiedy sos zacznie bulgotać dodaj cebulę i paprykę. Dusimy przez ok. 5 minut i dodajemy cukinię i resztę przypraw. Przykryj patelnię. Zerknij do wody na makaron. Pewnie już bulgocze. Wsadź makaron, jeżeli nie mieści się w garnku, pokrusz go trochę i przykryj garnek. Makaron będzie gotował się 6 minut, to jest czas w którym warzywa nabiorą aromatów i będą odpowiednio miękkie. Odcedzony makaron umieszczamy na patelni, całość mieszamy, aby nasz sos pokrył makaron. Po chwili (2-3 minuty) dodajemy por i rzepę. Całość mieszamy. Podajemy obsypane odrobiną szczypiorku. Na stole warto postawić sos sojowy i sezam.

Makaron można zabrać ze sobą do pracy, jest pyszny na zimno. Idealnie zmieści się w Waszym Lunch Box’ie.

Mie Noodles with vegetables in soy sauce with cane sugar

Ever since January began, I have the impression that during my sleep I jumped into a time machine and moved into the spring period. In the morning, the birds chirp happily, rays of the sun warm me up, even single flowers fill with optimism. The day is longer… for a dozen or so seconds, but always. Unfortunately, the calendar reminds me that this is not the time. And what’s worse, even today I could feel the cold breath of air.

To get warmer today, Mie Noodles with stewed vegetables appeared on the table. One portion left, perfect for tomorrow’s lunch at work 😉

Ingredients for 4 solid portions:

  • 1 pack of Mie Noodles (250g)

Vegetables:

  • 1 onion
  • 1 red pepper
  • 1 yellow pepper
  • 1 zucchini
  • 1/3 time
  • 1/2 white turnip long

Sauce:

  • 2 tablespoons of avocado or vegetable oil
  • 8 tablespoons of soy sauce
  • 1 tablespoon of cane sugar
  • 125 ml of water
  • 1 teaspoon of red curry paste

Spices:

  • 0.5 teaspoon of pepper
  • 1 teaspoon of sweet pepper
  • 1 teaspoon of grated ginger

Preparation:

Put a pot of water on a gas. During this time, we can prepare all vegetables for stewing. Cut the onion, zucchini and turnip in half and then into thin slices. Peppers cut into 4 pieces and then in narrow strips, cut leek into rings.

In a large pan (really big) put all the ingredients of the sauce, mix. When the sauce starts bubbling, add onion and peppers. Stew for about 5 minutes and add zucchini and the rest of the spices. Cover the pan. Take a look at the water for noodles. Probably already bubbling. Stick the noodles, if it does not fit in the pot, crush it a little and cover. Noodles will boil for 6 minutes this is the time when vegetables will acquire aromas and will be soft enough. Place the strained noodles in a pan, mix everything so the noodles will be covered with a sauce. After a moment (2-3 minutes) add leek and turnip. Mix everything. Serve sprinkled with a bit of chive. Put on a table soy sauce and sesame to add to single portions.

You can take noodles to work, cold noodles are still delicious. It perfectly fits in a Lunch Box.

Przede mną kolejny wyjazd. J za niecałe 24 godziny będę w drodze do Rumunii. Tym razem tylko na nie całe 2 tygodnie. W szaleństwem przygotowań i niedzielnej deszczowej pogodzie przyszedł czas na relaks. Znacie j przepis na czekoladowe muffiny, ale tym razem dodałam do nich gruszkę klaps i imbir. Przed nałożeniem do papilotem dodajcie pokrojone dwie gruszki i starte 2 cm imbiru. Dobrze wymieszaj. Idealne na popołudniowe wylegiwanie się na kanapie. Sprawdźcie sami.

Another trip ahead of me. In less than 24 hours I will be on my way to Romania. This time only for 2 weeks. In the madness of preparation and rainy Sunday, I found some time to relax. Before putting the chocolate to the baking try add diced pears and grated 2 cm of ginger. Mix well. Perfect for an afternoon relaxes on the couch. Check yourself.

Weź ulubioną książkę (a może masz ochotę obejrzeć film), ciepły, miły w dotyku koc (gdzie ta wiosna…??), wygodnie usiądź na kanapie, wyciągi się. Na stoliku obok postaw dzbanek pysznego słonecznego naparu. Delektuj się chwilą. Miłego weekendu!

Składniki:

  • 375 ml gorącej wody
  • 5-8 nitek szafranu
  • ¼ łyżeczki cynamonu
  • ¼ łyżeczki kurkumy
  • 2-3 ziarna kardamonu
  • 3-4 goździki
  • pół soku z cytryny
  • 2 łyżeczki miodu
  • 0,5 cm imbiru pokrojony w kawałki

Teapot full of sunPrzygotowanie:

Zagotuj wodę, przelej odpowiednią ilość dzbanka. Następnie dodaj wszystkie składniki poza szafranem. W małym kubku wlej odrobinę wody, wrzuć szafran. Zamieszaj, nawet kilka razy, szafran po chwili puści swój kolor i odżywcze substancje. Następnie przelej do dzbanka. Zamieszaj całość. Kurkuma nie rozpuszcza się w wodzie, opadnie na dno. Nalej do filiżanki złoty napar. Dzbanek można podgrzewać, a przed kolejną porcja naparu zamieszaj zawartość dzbanka.

Take your favourite book (or maybe you would like to see some good movie), warm, nice in touch blanket (where is spring..?), sit comfortably on a couch, lie back. On a tea table put a teapot with delicious brew full of sun. Enjoy the moment. Have a nice weekend!  

Ingredients:

  • 375 ml hot water
  • 5-8 saffron threads
  • cinammon ¼ of teaspoon
  • half of lemon
  • honey 2 teaspoons
  • cardamom 2-3 seeds
  • curcuma ¼ of teaspoon
  • 3-4 cloves
  • 0,5 cm fresh ginger cut in to pieces

Preparation:

Boil water, pour appropriate amount of water to the teapot. Next add all ingredients except saffron. To small cup pour some water and add saffron. Stir, in few moments saffron will give its colour and nutritional substances.  Put the liquid to the pot. Stir all. Curcuma does not dissolve in water, it will fall to the bottom. Pour golden- sunny brew to a tea cup. Teapot can be heated, before pouring another portion mix the brew first.
