Makaron Mie z warzywami w sosie sojowym z cukrem trzcinowym

Od kiedy zaczął się Styczeń mam wrażenie, że podczas snu wskoczyłam do wehikułu czasu i przeniosłam się w okres wiosenny. O poranku ptaki ćwierkają radośnie, promienie słońca rozgrzewają, a nawet pojedyncze kwiaty napawają optymizmem. Dzień jest dłuższy…o te kilkanaście sekund, ale zawsze. Niestety kalendarz codziennie przypomina, że to jeszcze nie ten czas. I nawet dzisiaj można było poczuć zimny powiew powietrza. Brry!

Aby rozgrzać się dobrze na stole pojawił się dzisiaj Makaron Mie z duszonymi warzywami. Została jedna porcja, w sam raz na jutrzejszy lunch w pracy 😉

Składniki na 4 solidne porcje:

  • 1 opakowanie makaronu Mie (250g)

Warzywa:

  • 1 cebula
  • 1 papryka czerwona
  • 1 papryka żółta
  • 1 cukinia
  • 1/3 pora
  • 1/2 rzepy białej

Sos:

  • 2 łyżki oleju z avocado lub roślinnego
  • 8 łyżek sosu sojowego jasnego
  • 1 łyżka cukru trzcinowego
  • 100 ml wody
  • 1 łyżeczka czerwonej pasty curry

Przyprawy:

  • 0,5 łyżeczki pieprzu
  • 1 łyżeczka słodkiej papryki
  • 1 łyżeczka tartego imbiru

Wstaw garnek z wodą na gaz. W tym czasie możemy przygotować wszystkie warzywa do duszenia.

Cebulę, cukinię i rzepę kroimy na pół, a następnie na cienkie plasterki. Papryki kroimy na 4 części i wąskie paski, a pora w krążki. W dużej patelni (na prawdę dużej) umieść wszystkie składniki na sos, wymieszaj. Kiedy sos zacznie bulgotać dodaj cebulę i paprykę. Dusimy przez ok. 5 minut i dodajemy cukinię i resztę przypraw. Przykryj patelnię. Zerknij do wody na makaron. Pewnie już bulgocze. Wsadź makaron, jeżeli nie mieści się w garnku, pokrusz go trochę i przykryj garnek. Makaron będzie gotował się 6 minut, to jest czas w którym warzywa nabiorą aromatów i będą odpowiednio miękkie. Odcedzony makaron umieszczamy na patelni, całość mieszamy, aby nasz sos pokrył makaron. Po chwili (2-3 minuty) dodajemy por i rzepę. Całość mieszamy. Podajemy obsypane odrobiną szczypiorku. Na stole warto postawić sos sojowy i sezam.

Makaron można zabrać ze sobą do pracy, jest pyszny na zimno. Idealnie zmieści się w Waszym Lunch Box’ie.

Mie Noodles with vegetables in soy sauce with cane sugar

Ever since January began, I have the impression that during my sleep I jumped into a time machine and moved into the spring period. In the morning, the birds chirp happily, rays of the sun warm me up, even single flowers fill with optimism. The day is longer… for a dozen or so seconds, but always. Unfortunately, the calendar reminds me that this is not the time. And what’s worse, even today I could feel the cold breath of air.

To get warmer today, Mie Noodles with stewed vegetables appeared on the table. One portion left, perfect for tomorrow’s lunch at work 😉

Ingredients for 4 solid portions:

  • 1 pack of Mie Noodles (250g)

Vegetables:

  • 1 onion
  • 1 red pepper
  • 1 yellow pepper
  • 1 zucchini
  • 1/3 time
  • 1/2 white turnip long

Sauce:

  • 2 tablespoons of avocado or vegetable oil
  • 8 tablespoons of soy sauce
  • 1 tablespoon of cane sugar
  • 125 ml of water
  • 1 teaspoon of red curry paste

Spices:

  • 0.5 teaspoon of pepper
  • 1 teaspoon of sweet pepper
  • 1 teaspoon of grated ginger

Preparation:

Put a pot of water on a gas. During this time, we can prepare all vegetables for stewing. Cut the onion, zucchini and turnip in half and then into thin slices. Peppers cut into 4 pieces and then in narrow strips, cut leek into rings.

In a large pan (really big) put all the ingredients of the sauce, mix. When the sauce starts bubbling, add onion and peppers. Stew for about 5 minutes and add zucchini and the rest of the spices. Cover the pan. Take a look at the water for noodles. Probably already bubbling. Stick the noodles, if it does not fit in the pot, crush it a little and cover. Noodles will boil for 6 minutes this is the time when vegetables will acquire aromas and will be soft enough. Place the strained noodles in a pan, mix everything so the noodles will be covered with a sauce. After a moment (2-3 minutes) add leek and turnip. Mix everything. Serve sprinkled with a bit of chive. Put on a table soy sauce and sesame to add to single portions.

You can take noodles to work, cold noodles are still delicious. It perfectly fits in a Lunch Box.

Jeszcze tylko 5 dni i będę zanurzać się w błękicie morza, stąpać po kamienistych brzegach, szukać muszelek, łapać promienie słońca. No dobrze, mam nadzieje, że uda się tak spędzić chociaż jeden dzień. To będą intensywne 3 tygodnie na badaniach podwodnych i naziemnych u wybrzeży Azji Mniejszej. Plecak wyciągnięty, sprzęt przygotowany, mapy leżą, ołówki, notes są i tysiąc innych rzeczy też. W tym szaleństwie przygotowań nie za brakło miejsca na kawałek morelowego ciasta. Ahoj Przygodo!

Składniki:

  • ok. 10 morel bez pestek
  • 3 łyżki trzcinowego cukru

ciasto (przepis od Dziadka):

  • 100 gramów masła miękkiego
  • 50 gramów cukru pudru
  • 200 gramów mąki pszennej
  • 1 jajko
  • 3-4 krople zapachu migdałowego – opcjonalnie

Z podanych składników zagniatamy ciasto, owijamy folią i schładzamy przez około 30 minut w lodówce.

Morele myjemy, usuwamy pestki i kroimy na połówki.

Formę do tarty (bez ruchomego dna) smarujemy masłem, obsypujemy cukrem trzcinowym i wykładamy połówkami moreli.

Nagrzewamy piekarnik do 200°C.

Ciasto wyciągamy z lodówki, wałkujemy na ok 0,5 cm grubości. Przekładamy na owoce, brzegi ciasta dociskamy do owoców i brzegów formy.

Tartę pieczemy ok. 25-30 minut lub aż zrumieni się ciasto.

Po wyciągnięciu należy odczekać ok. 10-15 minut aby powstały syrop z moreli wsiąknął w owoce i ciasto. Następnie przewracamy ciasto zdecydowanym ruchem na drugą stronę.

Ingredients:

  • about 10 apricots without stones
  • 3 tablespoons of cane sugar

Pastry (recipe from my Grandfather):

  • 100 grams of soft butter
  • 50 grams of icing sugar
  • 200 grams of wheat flour
  • 1 egg
  • 3-4 drops of almond scent – optional

To prepare the pastry mix all ingredients until we will receive dough, wrap the pastry in a foil and chill for about 30 minutes.

Wash apricots, remove the stones and cut into halves.

Tarte form (without moving bottom) grease with butter, sprinkle with cane sugar and fill in with apricot halves.

Preheat the oven to 200°C.

Roll out the pastry on a lightly floured surface to about the thickness of 0.5 cm. Put the cake on fruits, press edges of the dough to the fruits and form.

Bake tarte tatin about 25-30 minutes or until the cake is brown.

Leave the cake to rest for 10-15 minutes, during this time apricot syrup will soak in fruits and cake.

Roll the cake with firm motion. Enjoy.
