Zabieram Was dzisiaj w podróż po smakach Turcji, a dokładnie po smakach mojej serdecznej przyjaciółki Ceyda. Pomimo że dzielą nas prawie 3000 kilometrów jesteśmy w stałym kontakcie już od kilku lat. Wymieniamy się wrażenia dnia codziennego, zdjęciami, wspieram w czasie cięższych dni. A jak widzimy się, to siadamy i zaczynamy rozmawiać jakby nie minął nawet tydzień od ostatniego spotkania. Do tak bliskiego grona znajomych zaliczam jeszcze tylko kilka osób, ale o nich jeszcze usłyszycie.

Kemer, Turcja, stała temperatura +35°C (czasami +39°C), słońce w pełni, choć czasami zagubiona chmura pojawia się na niebie. Przenoszę się na chwilę na obrzeża miasta i delektuje się śpiewem ptaków, widokiem gór Taurus, śródziemnomorską roślinnością, wieczorami zapachem drzew cedrowych, a nocą śledzę mapę gwiazd na niebie..magia! A wszystko to uzupełnia przepyszne tureckie jedzenie. Podzielę się z Wami tylko kilkoma przepisami na pyszne śniadanie i kolację, ale to nie koniec, resztę będę testować po powrocie do Warszawy. Miałam tylko niecałe 24 godziny prawdziwych wakacji 😉

Śniadanie

Idealne śniadanie po Turecku jest podawane z kiełbasą Sucuk, jajkami, oliwa, ser biały, świeża bułka, pomidory i ogórki, a do tego smażony ser halloumi, czerwony koktajly i turecka kawa z likierem! Zaczynamy!

  • 3 małe buraki
  • 6 moreli ( 3 duże)
  • kiść winogron czerwonych
  • 2 jabłka
  • 3 śliwki
  • 2 cm świeżego imbiru

Wszystkie owoce miksujemy w sokowirówce. Gotowe!

Kiełbasa Sucuk z jajkami

  • kiełbasy Sucuk (12 krążków to porcja na 3 osoby, przywiozę kiełbasę z Turcji, ale zawsze można użyć kiełbasy z mięsem wołowym, nie będzie jednak tego samego smaku, ale…może coś nowego)
  • 4 jajka
  • 1 łyżka masła

Pokrój kiełbasę w krążki i podsmaż na maśle na patelni, aż będą brązowe. Dodaj jajka, wymieszaj wszystko jakbyś przygotowywał jajecznicę.

Oliwa z oliwek z przyprawami

Do miseczki wlej 3 łyżki oliwy, dodaj cząber, tymianek, słodką paprykę. Maczaj w niej chleb.

Smażony ser halloumi

Kilka plasterków sera halloumi podsmaż na maśle, aż będą złote.

Na stole pojawia się też sałatka z pomidorów i ogórków, po porostu pokrojone w plastry warzywa i lekko przemieszane, biały ser w zalewie (uwielbiam te sery), świeży chleb i krem z orzechów laskowych.

Po takim śniadaniu mój brzuszek był bardzo zadowolony! I gotowy na kawę po Turecku.

Kawa po Turecku

1,5 łyżeczki kawy po Turecku (sproszkowana kawa) na 1 małą filiżankę wody na osobę.
Umieść składniki w tygielku i gotuj kawę, aż pojawi się piana.
Ceyda podała kawę z likierem z kostką lodu. Tego dnia temperatura sięgała już rano +35°C.

To było naprawdę miły i długi poranek! 🙂

Kolacja

Mam przepis na domowy Durum, ale ten na kolację kupiłyśmy u Pana w małej knajpce w Kemer. Lekko pikantny z sosem z granatów! Pyszności. Do tego zrobiłyśmy Hummus i Cacik.

Mediterranean Hummus

  • 300 gramów hummus
  • 2 czosnki
  • pół pęczka pietruszki
  • 1/3 pęczka koperku lub kolendry
  • 2 łyżki oliwy z oliwek
  • szczypta czerwona słodka papryka do podania

Kupiłyśmy gotowy hummus – tutaj jest naprawdę dobry, zresztą w Warszawie też kupuję gotowy (mam swoje miejsce gdzie jest pyszny). Przełóż pastę do miski, następnie dodaj pokrojony drobno czosnek, pietruszkę, koperek (lub kolendrę – osobiście wolę z kolendrą bardziej), oliwę z oliwek i wymieszaj. Posyp czerwoną słodką papryką.

Cacik sos

  • 1 zielony średni ogórek
  • 4-5 łyżki gęstego jogurtu
  • 1 czosnek
  • 1 łyżka oliwy z oliwek
  • 1 łyżeczka suszonej mięty

Ogórka obieramy i ścieramy na tarce do miski (na drobnych oczkach), dodajemy jogurt, pokrojony czosnek, oliwę i mieszamy. Na koniec sos posypujemy miętą.

Cooking with Ceyda

I am taking you today on a journey through the flavours of Turkey, and precisely through flavours of my very close friend Ceyda. Although we are nearly 3000 kilometres apart, we have been in constant contact for several years. We exchange everyday impressions, photos, and support during harder days. And when we see each other, we sit down and start talking as if not even a week passed since the last meeting. I have only a few people with whom I am so close, but you will hear about them next time.

Kemer, Turkey, constant temperature + 35°C (sometimes + 39°C), full sun, though sometimes lost cloud appears on the sky. I move for a moment to the outskirts of the city and enjoy the singing of birds, the view of the Taurus mountains, Mediterranean flowers and trees, in the evenings the smell of cedar trees, and at night I follow the map of stars in the sky..magic! And all this is complemented by delicious Turkish food. I will share with you only few recipes for perfect breakfast and supper, but this is not the end, I will test the rest recipes after returning to Warsaw and share with you. I just had 24 hours of real holidays 😉

Breakfast

The perfect Turkish breakfast is served with Sucuk sausage, eggs, olive oil, white cheese, fresh bread, tomatoes and cucumbers, fried halloumi cheese, red cocktail and Turkish coffee with liqueur! Get Ready!

Red Cocktail

  • 3 small beetroots
  • 6 apricots
  • bunch of red grapes
  • 2 apples
  • 3 plums
  • 2 cm of fresh ginger

All ingredients put into juice squeezer. Enjoy!

Sucuk sausage with eggs

  • Sucuk sausage (12 rings it’s a portion for 3 people, I will bring one sausage from Turkey, but you can try to use a beef sausage – it won’t be the same taste but…something new)
  • 4 eggs
  • 1 spoon of butter

Cut Sucuk into rings, fry on a pan with butter until golden brown, add eggs. Prepare like scrambled eggs.

Olive oil with spices

Pour 3 tablespoons of olive oil into the bowl, add savoury, thyme and sweet pepper.

Dip the bread in it.

Fried halloumi

Put few slices of halloumi cheese into the pan, add butter, fry until golden brown.

On the table you can also find a salad of tomatoes and cucumbers, just simply sliced vegetables and mixed up, white cheese in the salty water (I love these cheeses), fresh bread and hazelnuts cream.

After this breakfast, my stomach was so happy! And ready for the Turkish coffee.

Turkish coffee

1,5 tablespoon of Turkish coffee (powdered coffee) per 1 small cup of water per person. Insert ingredients into a pot and boil the coffee until foam appears.
Ceyda served the coffee with a liqueur and ice cube. It was +39°C that day.

It was really nice and long morning! 🙂

I have a recipe for home-made Durum, but this one for supper was bought in a small restaurant in Kemer. Slightly spicy with pomegranate sauce! Deliciousness. We prepared Hummus and Cacik sauces.

Mediterranean Hummus

  • 300 grams of hummus
  • 2 cloves of garlic
  • half a bunch of parsley
  • 1/3 bunch of dill or coriander
  • 2 tablespoons of olive oil
  • pinch of sweet red pepper for serving

We bought a ready-made hummus, I always buy too (I have one place where it is so delicious!). Place it into the bowl. Cut finely garlic, parsley and dill (or coriander) – put into the bowl with olive oil and mix well. Sprinkle with sweet red pepper.

Cacik sauce

  • 1 medium green cucumber
  • 4-5 tablespoons of thick yoghurt
  • 1 garlic
  • 1 tablespoon of olive oil
  • 1 teaspoon of dried mint

Peel the cucumber and grate it to the bowl (on small meshes), add yoghurt, sliced garlic, and mix olive oil. Finally, sprinkle the sauce with mint.

Szparagi po mału znikają ze straganów. Wiecie, że nie miałam okazji zjeść za dużo białej odmiany w tym roku…może w 2019 będzie inaczej 😉 Zajadam ostatnią porcję makaronu w kremowym sosie ze szparagami i marzę żeby przenieść się gdzieś pod las, usiąść na werandzie, posłuchać szumu drzew i ćwierkania ptaków. Wszystko zaczyna się od marzeń!

Składniki:

  • pęczek szparagów
  • makaron penne 3x ¾ szklanki
  • 1 żółtko
  • 100 śmietany 30%
  • 1 łyżeczka granulowanego czosnku
  • sól I pieprz do smaku
  • parmezan 50 gramów + do posypania gotowego dania
  • 1 łyżka oliwy
  • 4 łyżki wody z gotowania makaronu

Penne w kremowym sosie ze szparagami

Przygtowanie:

Makaron ugotuj zgodnie z opisem na opakowaniu. Szparagi przepłucz, odłam twarde końcówki. Wsadź do wrzącej, lekko osolonej wody i gotuj do miekkości (moje szparagi były dość cienkie, były gotowe po ok. 10-11 minutach), następnie pokrój na trzy części. Ugotowany makaron odcedź, zachowaj 4 łyżki wody. W garnku umieść makaron, dodaj 4 łyżki wody z gotowania, śmietan, żółtko i ser, całość intensywnie wymieszaj podgrzewając około minuttę na małym ogniu. Dodaj sól i pieprz do smaku. Na koniec dodaj część szparagów (część z główkami zostaw do podania) i delikatnie wymieszja. Porcję makaronu podaj z główkami szparagów, posypane permezanem i polane pyszną zieloną oliwą.

Pomarz trochę!

Penne w kremowym sosie ze szparagami

Penne in a creamy sauce with asparagus

Asparaguses slowly disappears from the stalls. You know that I have not had the opportunity to eat too many white asparaguses this year … maybe in 2019, it will be different;) I’m eating the last portion of pasta in a cream sauce with asparagus and dream to move to the forest, sit on the porch, listen to the sounds of trees and tweeting birds. Everything starts with dreams!

Ingredients:

  • bunch of asparagus
  • penne pasta 3 x ¾ cup
  • 1 egg yolk
  • 100 ml cream 30%
  • 1 teaspoon of granulated garlic
  • salt and pepper to taste
  • Parmesan cheese 50 grams + for sprinkling the dish
  • 1 tablespoon of olive oil
  • 4 tablespoons of water from cooking pasta

Preparation:

Cook the pasta as described on the package. Rinse the asparagus, cut off hard part. Add the asparagus to the boiling slightly salted water and until soft (my asparagus were quite thin, they were ready after 10-11 minutes), then cut into three parts. Strain ready pasta, keep 4 tablespoons of water. Place the noodles in the pot, add 4 tablespoons of water, cream, egg yolk and cheese, stir the whole intensively for about a minute on a low heat. Add salt and pepper to taste. Finally, add ¾ of asparagus (leave the parts with heads) and mix gently. Add a portion of pasta with the asparagus heads, sprinkled with Parmesan cheese and poured with delicious green oil.
