Makaron conchiglioni nadziewany serem ricotta i suszonymi pomidorami

Początek tygodnia był bardzo intensywny. Lista spraw do załatwienia tylko wydłużała się, czas uciekał z prędkością geparda, a przedmioty użytku codziennego postanowiły odciąć mnie od wszystkiego. Może Wrzechświat wiedział co robi? Tę chwilę wykorzystałam na przygotowanie obiadu, który pomimom niesprzyjającym wiatrom udał się. Bo wiecie, czasami potrawy nie wychodzą tak jak chcemy 😉 Ostatnio przesoliłam gulasz warzywny. Ups!

Składniki:

  • 21 makaronu conchiglioni czyli muszelek (policzyłam ile zmieściło się u mnie w żarodpornym naczyniu 20x17cm, farsz idealnie mieści się w tej ilości makaronu)
  • ser ricotta 250g
  • 10-12 suszonych pomidorów
  • 1 mała lub pół dużej cebuli pokrojonej w kostkę
  • 1 łyżeczka czosnku granulowanego
  • 0,5 łyżeczki cząbru
  • 1 łyżeczka oregano
  • sól i pieprz do smaku
  • 1 łyżeczka oliwy z oliwek
  • 30 gramów tartego sera parmezan lub innego twartego sera
  • 1,5 łyżki masła
  • 1,5 łyżki mąki (czubate)
  • 300 ml mleka
  • szczypta gałki muszkatołowej
  • dwie garście pomidorków cherry

Przygotowanie:

Wstawiamy garnek z wodą na makaron. W między czasie kroimy pomidorki na pół, przekładamy do naczynia żaroodpornego. Skraplamy oliwą, doprawiamy solą i pieprzem. Wsadzmy do piekarnika nagrzanego do 180°C.

Czas na farsz. Do naczynia przekładamy ricottę, dosypujemy przyprawy, 1 łyżkę oliwy z oliwek, połowę porcjo parmezanu, pokrojone z cienkie paski suszone pomidory i cebulę. Wszystko mieszamy. Do wrzącej wody dodajemy makaron. Gotujemy przez 8 minut, mają być al dente. Makaron po mału miękknie, a my zrobimy w tym czasie sos beszamelowy. Rozpuścić w rondelku masło, dodaj gałkę muszkatołową i mąkę. Intensywnie wymieszaj. Dodaj sół i pieprz do smaku. Dolewaj po mału mleko ciągle mieszając. Mieszaj aż sos zgęstnieje i zagotuje się. Całość przelej do żaroodpornego naczynia. Muszelki odcedź, przelej zimną wodą. Następnie małą łyżeczką napełni każdą muszelkę farszem i dość gęsto powsadzaj w sos beszamelowy. Wszystko posypujemy resztą parmezanu. Muszelki wsadzamy do piekarnika na 10 minut. Po tym czasie serwujemy pięknie upieczone pomidorki i conchiglioni udekorowane bazylią.

Zjazdłam porcję pyszności i przetrwałam cały dzień. Nawet lista zaległości zmalała.

Conchiglioni pasta with ricotta cheese and dried tomatoes

The beginning of the week was very intense. The list of things to do was only getting longer, time was running with the speed of a cheetah, and everyday objects decided to cut me off from everything. Maybe Universe knew what he was doing? This moment without connection to the world I used to prepare a dinner, which despite the unfavourable winds went perfectly fine. You know, sometimes the dishes do not go out the way we want 😉 Recently, I have over salted the vegetable stew. Oops!

Ingredients:

  • 21 conchiglioni pasta in other words seashells (I counted how much it will fit in a dish of 20x17cm, the stuffing fits perfectly in this amount of pasta)
  • ricotta cheese 250g
  • 10-12 dried tomatoes
  • 1 small or half of the large onion, cut into cubes
  • 1 teaspoon of granulated garlic
  • 0.5 teaspoons of savoury
  • 1 teaspoon of oregano
  • salt and pepper to taste
  • 1 teaspoon of olive oil
  • 30 grams of grated Parmesan cheese or other hards cheese
  • 1.5 tablespoons of butter
  • 1,5 tbsp flour (heaped)
  • 300 ml of milk
  • a pinch of nutmeg
  • two handfuls of cherry tomatoes

Preparation:

Put a pot of water on a heat. In the meantime, cut the tomatoes in half, put them in a heatproof dish. Sprinkle with olive oil, season with salt and pepper. Put into the oven preheated to 180°C.

Time to prepare the stuffing. Put into a bowl ricotta, spices, 1 tablespoon of olive oil, half a portion of parmesan cheese, cut into thin strips dried tomatoes and onion. Mix everything. To boiling water add pasta. Cook pasta for 8 minutes, conchiglioni has to be al dente. Pasta is getting softer, stir it from time to time, meanwhile, make Béchamel sauce. Melt butter in a saucepan, add nutmeg and flour. Intensely mix. Add salt and pepper to taste. Slowly stir in the milk. Stir until the sauce thickens and boils. Pour it into the heatproof dish. Drain the shells, pour cold water on them. Then, with a small spoon, fill each shell with stuffing and place it in a thick béchamel sauce. Sprinkle everything with the rest of Parmesan cheese. Put the shells in the oven for 10 minutes. After this time, serve beautifully baked tomatoes and conchiglioni decorated with basil.

I ate a portion of deliciousness and survived all day. Even the list of arrears has decreased.
